BRUSCHETTA WITH RED APPLE AND ALMOND BUTTER

How about something a little different for breakfast today? Why don’t you skip your typical toast with butter and try this bruschetta with red apple and homemade almond butter? This is my new addiction and I just could not wait to post this recipe on the blog.  ‌Preparing this butter is easy and it won’t take more than 15 minutes. Making it yourself is much healthier than buying it somewhere too!

I prepare it with raw almonds that I buy at Gadis Supermercados. First, I roast them in the oven for about 6-7 minutes and then I put them in the food processor for a couple of minutes. It couldn’t be easier. On this particular occasion, to give it a personal touch, I added a little cinnamon and a touch of ground ginger.

Try this quick and healthy bruschetta with red apple and almond butter! 

 

INGREDIENTS‌‌ ‌‌for‌ ‌two‌ ‌bruschette‌ ‌

450‌ ‌gr‌ ‌raw almonds with their skin

20‌ ‌ml‌ ‌sunflower oil

2‌ big slices of bread for bruschetta

2 tbsp ground cinnamon

1 tbsp ground ginger

A pinch of salt

One red apple

Honey to taste

A handful of flaked almonds (optional)

 

PREPARATION‌

Cover an oven tray with baking paper and place the almonds, making sure they are spread evenly and not one on top of another. Bake at 180º for 6-7 minutes. Them, remove them from the oven, let them cool for about 3-4 minutes, and then put them into the food processor or grinder, together with the sunflower oil, cinnamon, ginger, and salt.

 Now, bake the bread or if you prefer, toast it. Hereafter, cut the apple into thin slices like in the photos. Assemble each bruschetta, spreading a generous layer of almond butter, then the apples, flaked almonds, and some honey.
