How about some energy bars with pumpkin seeds for breakfast? I’m sure you will love them as they are crunchy and full of flavor. I made them in no time with eco products from Biocop, which means they are completely healthy and they are a perfect way to start your day.
Also, pumpkin seeds are nutritious because they are rich in omega 3 fatty acids, magnesium, zinc, and antioxidants. I have them all year round and whenever I can I use them in soups and in salads too.
When I make bars I make at least two batches, so they last several days. I love taking some with me if I’m going to be out for many hours. They are very convenient because they are nutritious and a great source of energy when you get a little hungry.
It’s all advantages, really. So, here’s the recipe. You can, of course, double or triple the amounts.
INGREDIENTS for 5 bars
180 gr flour
130 gr unsalted butter
135 gr muesli Biocop
30 gr Biocop pumpkin seeds
4 ½ tbsp Biocop rosemary honey
1 ½ tbsp water
PREPARATION
In a bowl, mix the flour, the muesli, and the pumpkin seeds.
In a saucepan, melt the butter, the honey and add the water. Mix thoroughly until smooth and then pour onto the bowl. Combine everything well and put the dough in a mould lined with baking paper. Use your hands to make sure the dough is compact and approximately 2.5 cm thick.
Bake at 150ºC for 15-20 minutes and voilà, now you have the most delicious of pumpkin seed bars ready to provide you the boost of energy you need. The good thing about these energy bars with pumpkin seeds is that you can have them anywhere and anytime, in the morning or as a snack in mid-afternoon.
