CLASSIC FRENCH MADELEINES

As I mentioned yesterday on Instagram, I tried to prepare these classic French madeleines three times before I had a 4th successful baking! I did read different recipes but for different reasons, I didn’t like the taste or the sponginess. 

Then I remembered we have a French cookbook at home about classic recipes so I took a look and… voilà! The best madeleines I have ever tried out of France! So this is the reason I decided to share it here. If you follow the steps accurately I promise you will have a delicious breakfast or sweet for your late afternoon tea or coffee time. 

I also covered the tips with melt chocolate and chopped nuts. Yum! 

INGREDIENTS for about 20 madeleines

60 gr granulated white sugar

60 gr all-purpose flour 

60 gr pure unsalted butter

2 medium eggs, at room temperature

1 tbsp vanilla extract

 

METHOD

Start by melting the butter completely and allow it to cool. In a mixing bowl beat the eggs and sugar until well combined. Add the flour slowly and previously sifted while you continue mixing. Later, add the butter and vanilla and combine again. 

Now dust the “Madeleine de Commercy” moulds with extra flour and butter. Add ¾ of the batter and bake for about 7-8 minutes in your preheated oven to 160C (320F). Then turn off the oven and keep them inside for another 7 minutes. 

Remove the mould from the oven, allow to cool a bit, transfer to a dish, and… buon appetito!
