DEEP-FRIED AND CRISPY ARTICHOKES

I love artichokes in so many ways: slowly cooked, in a veggie stew, in a risotto… and this time I am showing another way of enjoying them very quick and delicious: deep-fried and crispy artichokes. 

I have to say I am not a big fried food eating person, but there are certain recipes I love to eat fried. And now they are in season, it seems the perfect occasion to try this idea and serve as an appetizer. Actually I enjoyed them with a cold beer. And I was not alone. Thomas joined me and later he helped me to shot the photo below… then Scooby came too to smell what we were having. 

INGREDIENTS for two people 

500 ml (2 ¼ cups) oil to fry 

150 gr  (1 cup) flour 

2 eggs, beaten

5 big artichokes

1 lemon 

Salt and pepper to taste

 

METHOD

Clean and remove the leaves of every artichoke and cut them into quarters, leaving about ½ an inch of the stem. Cut a lemon a squeeze it over them. For this recipe of deep-fried and crispy artichokes, we don’t need to add them into a bowl with water and lemon as we are going to prepare them immediately. Now, heat the oil in a big pan, and once is hot enough you can start to fry your artichokes.

In a dish add the flour and in another the beaten eggs. Now take each quarter and dip in the egg mixture, then dredge in the flour. Fry them and turn a few times so they cook well on all sides. Remove with a slotted spoon, and place on a paper towel-lined plate, sprinkle now with a little salt and pepper, and serve.
