Who said salads were just for summer? Today I am updating the blog with this delicious endive, orange and pomegranate salad.
We eat lots of different salads at home. Almost everyday since we love them! Maybe it’s something I took from my mom. Since I was a kid, these type of salads were always on the dinner table. A huge bowl of salad. Now, things are not different since everytime I go to have lunch to my parents, there’s a big salad as a garnish waiting to be eaten. When I lived in Bologna (Italy), in 2008, Thomas barely ate them. Now ten years later he usually has salads as frequency as me!
I love to prepare them with different seasonal ingredients and during this time of the year, endives, oranges, and pomegranate are coming back to the groceries, so this is why I thought to use them for this endive salad. Plus, this makes a perfect garnish to any delicious lunch or dinner!
INGREDIENTS for two people
Two endives
One pomegranate
One orange
100 gr (½ cup) feta cheese
A few lombardy sprouts
Extra virgin olive oil and salt to taste
METHOD
It will not take you more than 5 minutes to prepare it. Wash the endives, cut an orange in slices and clean a pomegranate. Transfer all to a dish or salad bowl.
Now, crumble the feta cheese on the top and add some lombardy sprouts. Season with olive oil and add salt to taste.
