Have you ever tried to prepare red lentil hummus? It’s scrumptious and as a big fan of hummus, I have already prepared other flavours, including this beetroot hummus I published here in the blog some time ago. Today these red lentil one has become one of my favourite as it’s creamy, quick to prepare and super delicious.
Instead of the chickpeas, we use the lentils and as we are using the red ones we don’t need to soak in advance. Just cook them, allow to cool and combine them in a food processor with the rest of the ingredients. As easy as it sounds!
In my opinion, this red lentil hummus is perfect for any season and you can serve it with some grissini, toast bread or crackers, and a nice red wine glass. You will have a nice appetizer or light dinner! Buon appetito!
INGREDIENTS
200 gr (1 cup) red lentils
1 ½ tbsp tahini
1 ½ extra virgin olive oil
1 tbsp paprika
2 tsp cumin
The juice of half a lemon
A pinch of salt
METHOD
You won’t need to soak these type of lentils so cook them between 15-20 min at low heat. Then drain them and allow to cool.
In a blender or food processor add all the ingredients and mix well. Serve with a bit of olive oil and paprika on top and… Buon appetito!!
