A few days ago my oven broke down… what a pain!! I use it a lot, almost every day, so now I am waiting for the technician who is coming tomorrow to repair it. Anyway, yesterday I decided to try to prepare granola in a pan so this is the reason I am updating the blog today: with this granola with cocoa nibs and yogurt.
I already knew you can prepare the granola in a skillet but honestly it always seems it’s quicker when you use your oven. You just need to remove it all the time to prevent burning.
INGREDIENTS
160 gr rolled oats
3 tbsp extra virgin coconut oil
3 tbsp honey
A pinch of salt
Nuts, I added hazelnuts, nuts, and Brazilian nuts
Two redberry yogurt
Blueberries
METHOD
Roast the rolled oats and nuts in a pan or skillet at medium heat for about 5-6 minutes. Set aside.
Now, melt the coconut oil and honey. Add the salt and mix. Then transfer the oats and nuts to the skillet and mix continuously for 5 minutes more or until the oats are gold-brown.
Remove from the heat and allow to cool completely. In small bowls or jars place the granola and cocoa nibs, then the yogurt, and last add extra granola, nibs, and a few blueberries as you can see in the photos.
