Dear readers of Cuore di Pane,
The week starts with this fresh and savory peach crumble. I was indecisive about which one to publish here, as it’s my first time suggesting this recipe on the blog. I usually like my crumble with blueberries or strawberries.
This time though I decided to prepare it with peaches as are in season and I have to say that I really love how it tastes. Also, I thought of adding oat flakes into the mix as I frequently do with my breakfast. If you follow me on Instagram you already know this and actually here you can read one of my favourite oat flakes recipe.
The smell in the kitchen was so good that Scooby and Thomas decided to wait patiently while looking to the oven! It was lunchtime but we could not avoid eating some with macadamia nut ice cream.

INGREDIENTS for a baking tray of 23 x 15 cm / 9 x 6 inches
500 gr (2 ¼ cups) diced peaches
105 gr (1 ⅛ cups) flour
105 gr (1 cup) oat flakes
100 gr (½ cup) unsalted butter
90 gr (½ cup) granulated white sugar
METHOD
Preheat the oven to 150ºC (300ºF). In a medium bowl mix the already sifted flour with the oat flakes and two-thirds of sugar (60 gr). Mix with a spoon. Melt the butter, add it directly to the bowl and combine well. Allow to cool in the fridge for half an hour.
Meanwhile, peel the peaches and cut them into pieces. Place them covering the bottom of a baking tray. Sprinkle the remaining sugar and then the crumble mix covering the fruit.
Bake for 20 minutes or until golden brown. Let it cool a bit before serving it.
