PORRIDGE WITH SPICED APPLES AND PISTACCHIOS

What’s your favorite breakfast lately? At home, we rotate breakfast so we love to enjoy the first meal of the day having simple toasts with butter and honey or jam, as well as avo toasts, a cake, pancakes… There are thousands of ideas, right? The thing is that breakfast seems to be really important today as there are so many people getting up early to prepare something else than just cereals or going outside to enjoy it in a bar. During this week I’ve been eating this delicious porridge with spiced apples and pistachios. 

I am in love with this milk. It’s now one of my favorites as I think it’s tastier than the other vegetable milk. Sometimes I am even able to drink it just alone, serving myself a big glass. So I decided to prepare this oatmeal with it and it’s scrumptious! Also, I added some spiced apples I had from an apple pie I prepared before, this is with cinnamon and nutmeg. 

As it happens with all the porridges this one it’s easy to prepare, you just need to prepare in advance the spiced apples, but if you don’t have time, do this step before anything else and then crush some pistachios… and breakfast is served!

 

INGREDIENTS for two people

300 ml (1 ¼  cups) walnut milk 

100 gr (1 cup) oats

One big apple

6 tbsp. crushed pistachios

1 tsp. nutmeg

1 tsp. cinnamon

 

METHOD

Peel the apple and diced it. Transfer it to a bowl and add the nutmeg and cinnamon. Mix well and allow to rest. 

Meanwhile, in a small pot pour the milk,  add the oats and cook at medium heat. Mix continuously until obtaining your preferred consistency. Serve it into two bowls, allow to cool a bit, and then add the apples and pistachios.
