WHITE BEAN HUMMUS

Hummus de alubias blancas
Those of you who read my posts frequently know that I am a big fan of hummus and have seen that I have published several recipes on this blog. Today, I bring you a different type: white bean hummus. 

What’s funny is that I’ve never been that fond of this particular legume, but I decided to give this recipe a try and the truth is that I loved the result. The flavor of this hummus is more delicate than other hummus I have prepared before, but I have to confess that it’s just as delicious.

This type of recipe is perfect if you have very little time, because it is quick and easy to prepare, and you can have it as a first dish or even a light dinner.

For this recipe, I left the beans soaking the night before, but you can also prepare this with pre-cooked beans that come in cans or glass jars.

 

INGREDIENTS

300 gr white beans
1 garlic clove
2 tablespoons of tahini
The juice of half a lemon
A dash of olive oil
1 ½ teaspoon of sweet paprika
2 teaspoons cumin 
A pinch of salt

Toppings: pine nuts, parsley, and baked cherry tomatoes

 

METHOD
Take the white beans you left soaking the night before and cook them in abundant salted water until they are tender. Let them cool a little and then put in a grinder with the rest of the ingredients. Correct oil and salt if necessary, because not all white beans are the same.
Serve in a bowl or dish. Add your preferred toppings and that’s it. Simple and delicious. Buon appetito with this white bean hummus!!
